Decadent, smooth, and dangerously moreish
If brownies are the workhorse of cannabis baking, truffles are the crown jewel. These ganache-based bites are rich, elegant, and perfect for gourmet gift boxes or premium edible collections. This recipe focuses on accuracy, mouthfeel, and shelf-stable infusion using properly emulsified cannabis oil.
Ingredients
- 200 g dark chocolate (60–70% cocoa, finely chopped)
- 100 ml heavy cream (35% fat)
- 25 g unsalted butter (room temperature)
- 5 g cannabis-infused coconut oil (adjusted for 250 mg THC total)
- 1.5 g sunflower lecithin
- Optional: 1–2 tsp flavourings (orange zest, espresso, chilli, mint extract)
- Optional coatings: cocoa powder, chopped nuts, desiccated coconut, tempered chocolate shell
Equipment
- Heatproof bowl
- Saucepan
- Silicone spatula
- Stick blender or whisk
- Scoop or melon baller
- Gloves for rolling

Method
- Heat the Cream
Bring cream just to a simmer in a saucepan. Remove from heat. - Make the Ganache
Pour hot cream over the chopped chocolate in a bowl. Let sit for 30 seconds, then stir gently until smooth. Add butter and mix until glossy. - Infuse and Emulsify
In a separate bowl, warm the cannabis oil slightly and stir in the lecithin. Blend into the ganache using a stick blender for 30–60 seconds until perfectly emulsified. - Flavour and Chill
Add flavourings if using. Let the ganache cool slightly, then refrigerate uncovered for 2–3 hours or until firm enough to scoop. - Scoop and Roll
Using gloves and a small scoop, portion into 15–20 truffles (approx. 10–12 g each for 10–12 mg THC). Roll gently into balls. - Coat or Shell
Dust with cocoa, roll in chopped nuts or coconut, or dip in tempered chocolate. Refrigerate until set.
Dosing and Storage Tips
- Yield: approx. 20 x 12 g truffles = 10–12 mg THC per truffle
- Store chilled in airtight containers for up to 10 days
- For longer storage, freeze in airtight boxes with layers of parchment
